VANILLA CUPCAKES WITH STRAWBERRY OR COOKIES AND CREAM FROSTING
Ingredients
For cupcakes:
· 1 ⅔ cups all-purpose flour
· 1 tsp baking powder
· 1 cup sugar
· ½ cup vegetable oil
· 3 eggs
· A splash of Vainilla Molina
· ½ cup milk
For frosting:
· 1 cup unsalted butter, at room temp
· 3 ⅔ cups powdered sugar
· ½ tsp salt
· A splash of Vainilla Molina
· 1-3 tsp heavy cream
· 3-4 chocolate cookies
· ¼ cup strawberry jam
For decorating:
· Extra chocolate cookies
· Fresh strawberries
· Sprinkles
Directions
For cupcakes:
1. Preheat oven to 350 °F.
2. Sift flour together with baking powder in a medium bowl. Set aside.
3. In another bowl, whisk together sugar and oil. Add eggs one at a time, beating well.
4. Add a splash of Vainilla Molina and mix until combined.
5. Add flour-baking powder mixture and milk in two portions, alternating between them and mixing after each addition, until mixture is smooth.
6. Pour batter into cupcake liners placed in a muffin pan, filling each liner about ¾ full.
7. Bake for 18-20 minutes, or until a toothpick inserted in center comes out clean.
8. Remove from oven and let cool completely.
For frosting:
1. Beat butter and salt for 1 minute until creamy.
2. Add powdered sugar in batches, beating on low speed after each addition. Scrape down sides of bowl between additions to ensure an even mixture.
3. Add 1 tbsp heavy cream and a splash of Vainilla Molina while mixing.
4. Beat on medium-high speed until light, fluffy and smooth. Divide frosting into 3 equal portions.
5. For cookies 'n cream frosting, crush cookies and fold them into one frosting portion.
6. For strawberry frosting, mix strawberry jam with another frosting portion until fully incorporated.
7. Place each type of frosting in its own piping bag fitted with a star tip.
For decorating:
1. Frost cupcakes with the different frostings.
2. Garnish with sprinkles, cookies, and fresh strawberry pieces.
