Dutch Baby: The Classic Dessert That Harry Styles Loves
In baking, there are recipes that suddenly make a comeback in our kitchens and remind us why they became classics in the first place.

Recently, while looking for ideas and fun facts about classic desserts, we came across something we wanted to share: this fluffy pancake is one of singer Harry Styles’ favorites! Since then, we haven’t been able to stop thinking about how perfectly it pairs with bright, citrusy flavors.
A Dutch Baby, also known as a German pancake, is a large, thin pancake that can be served sweet or savory. It’s baked in a very hot skillet, where the batter puffs up in the oven and then slightly deflates once it’s taken out.
It's traditionally served with lemon, butter and powdered sugar, but it can also be topped with fruit compotes, syrup, whipped cream or curds.
One of our favorite toppings is lemon curd, an intense and silky cream that adds brightness and acidity to the dish.
So, today we want to share this lemon curd recipe we recently made, using a splash of Vainilla Molina to soften the lemon's acidity and create a very special balance.

Ingredients:
Lemon Curd:
· 2 lemons (zested and juiced)
· 2 eggs
· 2 egg yolks
· ¾ cups sugar
· 7 tbsp unsalted butter (room temp)
· A splash of Vainilla Molina
Instructions:
Lemon Curd (make ahead of time):
1. Zest and juice lemons. Combine sugar and zest in a pot, rubbing them together until fragrant.
2. Add eggs, egg yolks and lemon juice. Whisk until smooth
3. Cook over low-medium heat, stirring constantly, until thickened.
4. Remove from heat, add butter and a splash of Vainilla Molina, stir until smooth. Strain into a container and cover with plastic wrap directly on curd to prevent crusting. Chill overnight.
5. Before using, whisk curd again to smooth it out.
6. Store in an airtight container in fridge for up to a week. Since it's homemade, it's best enjoyed sooner rather than later.
